          Once considered the poor man’s lobster, Wild Monkfish has elevated itself into its own class. The raw flesh is off-white to pale grey in color but cooks up beautiful white in its center. The taste is mild and sweet. You will receive it without skin or bones. Monkfish has a firm texture that does not flake so it makes it a natural choice for your favorite fish soups, stews, or bouillabaisses.
